Porridge honey beans and yam garnish with scent leaf

When it comes to beans, I love brown beans, honey beans, butter beans and local beans.
I don't really like cooking with black eye beans unless i don't have much options at hand. Reasons are these beans are very delicious especially when cooked porridge except for black eye beans. Though it doesn't take too long to prepare like others.

Today, I decided to prepare a sumptuous porridge with honey beans and yam. There are several leafs for garnishing but when it comes to porridge beans, I either choose pumpkin leaf or scent leaf.
I couldn't find pumpkin leaf, so I used scent leaf to garnish my porridge.
Fresh palm oil goes a long way in making a good beans porridge, it don't just add color but also add good taste and aromatic flavor to the porridge.
Here's how i made my porridge beans and yam garnish with scent leaf.

Ingredients needed

  • 3 cups of honey beans
  • 2 medium sized yam
  • 11 pieces of fresh tomatoes (big and small)
  • 1/2 cup of fresh palm oil
  • 2 tablespoons of salt
  • 2 tablespoons of red grounded pepper
  • a handful of scent leaf
  • enough water for cooking and washing the ingredients

Cooking duration

Cooking the porridge beans and yam took approximately 1 hour 10 minutes

How to prepare it

Pick the beans, wash and parboil it

I love carefully separating my beans from dirts before cooking, so my family won't eat stones or dirt while enjoying their meal. After separating the dirt, i washed the beans and preboiled it.

Cut and slice the yam. Wash it and set aside

While the beans are preboiling, i took that opportunity to peel the yams ,cut and slice them into small sizes. Then i washed them and kept them aside.

Remove the beans water and boil till tender

I allowed the beans to boil then I sieved out the water and boil again but this time, i cooked till tender (90% done).

Wash and cut the tomatoes and scent leaf

Then i wash the tomatoes, cut them and set them aside. I also washed and sliced the scent leafs.
All ingredients should be ready before the beans gets well cooked.

Now the beans is ready,add the washed yam

When the beans is soft and ready to be eaten, I add the washed and cut yam. I allowed the yam to boil for some time, then i added salt to it and allowed it to continue boiling.

Add the remaining ingredients

Now the beans and yam are almost ready, I added my fresh tomatoes, fresh palm oil, pepper and stir. Taste for salt and add more if necessary. I garnished with my scent leaf and stirred, making sure the ingredients are well mixed.

Remove from heat and serve

I allowed the mixture to boil for 2 more minutes, then i off the heat and serve.

My porridge beans was a delight, everyone loved it.
The beans are well cooked, well garnished and very delicious.
The scent leaf did a great job. It didn't just add color to the dish but also added great scent and aromatic flavor to the dish.
Above all this dish is very healthy.
