Sri Lankan cuisine is not only a delight to the taste buds but also rich in essential nutrients. Among its traditional sweet treats, Kurakkan Piti Aggala (Finger Millet Sweet Balls) holds a special place due to its high nutritional value and unique taste. This simple yet delicious snack is made with finger millet flour (kurakkan piti), jaggery, grated coconut, and a hint of aromatic spices. However, I used sugar instead of jaggery in my preparation. Packed with fiber, minerals, and energy-boosting properties, this treat is perfect for both children and adults. It also serves as a healthy alternative to store-bought sweets, making it a great snack for any time of the day. Now, let’s go step by step and prepare this nutritious and tasty delight! 😊

Materials Used.

Grated coconut 80g.
Fnger millet flour 150g.
Sugar 100g
2 Tablespoon of Peanut pieces, broken into.
Some water.
Salt to taste.

The cooking process as follows.

Now, let's get ready to prepare this delicious recipe! First, we need to make the sugar syrup. Place a pan on the stove and add the required amount of sugar. Allow it to caramelize until it turns a light golden color. Then, gradually add the necessary amount of water, stirring well to dissolve the sugar completely. Once it forms a smooth syrup, remove it from the heat and set it aside for later use.

Now, place a pan on the stove and lightly toast the finger millet flour for a few minutes until it releases a mild aroma. Be careful not to over-roast it. Once done, remove it from the heat and set it aside.

Next, in the same pan, lightly toast the grated coconut for a few minutes until it turns slightly golden and releases its natural aroma. Once done, remove it from the heat and set it aside.

Next, add the toasted finger millet flour to a mixing bowl, followed by the toasted grated coconut, chopped cashews, and a pinch of salt. Mix everything well to ensure an even combination of flavors and textures.

Finally, gradually add the prepared sugar syrup to the mixture, adjusting the quantity as needed. Mix well until it reaches a moldable. consistency, then shape it into small balls.
